What is yuzu koshio?
A Japanese seasoning or condiment paste made from yuzu skin or its juice, salt, and fresh chili peppers, which is then allowed to cure for a month and ground into a thick paste. As a condiment it is versatile and can be used for all types of dishes, and because of its unique flavor, it can be added to soups, poached or scrambled eggs, salads, mixed with sour cream or plain yogurt to create a dip and spread, used as a quick marinade for fish or pork, on fatty foods such as beef rib steaks, pork belly, as well as all types of seafood dishes and of course rice, quinoa, or any other cooked grains.
